Rainbow veg & veg’chop wrap

Ingredients

  • 1/2 pack of Veg’chop

  • 1/2 a Pepper - deseeded and thinly sliced

  • 1/4 Red Onions - peeled and julienned

  • I Avocado - sliced lengthways

  • 1/2 pack of mixed leaves         

  • 2 Carrots - peeled and julienned

  • I Tomato - deseeded and julienned

  • Spicy mayo - made with 1 tbsp each of Sriracha and mayo

  • 2 Seeded tortilla wrap

Instructions

  1. Slice the veg’chop into 3cm thick slices.

  2. Cook the slices in a frying pan with 1 tablespoon of oil for 1 minute either side.

  3. Mix the Sriracha and mayonnaise together.

  4. Spread the spicy mayonnaise onto the seeded tortilla wrap.

  5. Place the veg’chop pieces on top, followed by the peppers, carrots, avocado, tomato and red onions and mixed leaves on top.

  6. Wrap the tortilla and serve.
